Noodle Stir-Fry

1Small Onion
1Head of Broccoli
4 ozDiced Mushrooms
½Head of Cabbage (Savoy is yummy)
2Carrots
2Cloves of Garlic
2 tbspGrated (fresh) Ginger
½ tspSesame Oil
½ tbspNeutral Oil
½ cupSoy Sauce
8 ozSoba or Udon Noodles
1 lbChicken Breast, sliced thin (optional)
Chili Paste to taste

Cook the noodles per package directions.

In a large wok (or sauté pan) heat the oil. Add the garlic, ginger, onion, and chicken. Cook while keeping moving rapidly until the chicken is no longer pink. Remove the chicken, ginger, garlic, and onion. Add vegetables and cook while keeping them moving. Once done, remove the vegetables, and empty the oil. Add the soy sauce, chili paste, and any other seasoning and return everything to the wok (add the noodles). Combine and cover and let cook for a couple of minutes more.
