Roasted Garlic Potatos

1½-2 lbWaxy Potatos
2-3 TbspOlive Oil
1 TbspGarlic Powder
1 TbspDried Parsley
Salt to taste
Pepper to taste

Cut the potatoes into 1/2" cubes. In a bowl, coat thoroughly with oil, garlic powder, Parsley, salt and pepper. Place in a baking pan and cover with aluminum foil and cook for 20 minutes at 425F (the foil will help to steam the potatoes). Remove foil and cook for another 15-25 minutes.
