Cream of Mushroom Soup

1Small Onion
1Shallot
5 TbspButter
3 TbspFlour
16 ozAssorted Mushrooms
3½ cupsChicken Stock
¼ CupHeavy Cream
1 ¾ CupHalf & Half
DashDried Thyme
Salt to taste
Pepper to taste

Melt the butter in a pot, add the onion, shallot, and mushrooms. Cook until tender. Add flour (you're making a roux), stir, and cook for a little longer. Add chicken stock, half & half, and thyme. Cook until mushrooms are completely soft. Finish with the cream and salt and pepper.
